Huevos SPAM® Cheros

Ingredients

  • 6 6-in corn tortillas
  • 2 tbsps butter
  • 1 (340g) can SPAM® Classic, cut into 24 slices
  • 6 large eggs
  • 2 c powdered Queso Fresco cheese
  • 2 tbsp vegetable oil
  • Salsa of your choice, for topping

Directions

  1. In frying pan, heat oil. Quickly fry tortillas in hot oil. Pat dry with paper towels.
  2. In same frying pan, fry eggs in butter over medium heat. Remove eggs from pan. Add SPAM® slices; fry until golden brown on both sides.
  3. Place 4 slices fried SPAM® on each tortilla; top with fried egg. Sprinkle with 1/3 c cheese. Cover with the salsa of your choice.
